Maculan's pride, the sublime nectar called Torcolato, has won world acclaim and recognition. Torcolato is produced from Tocai, Vespaiolo and Garganega grape varieties. The bunches are tied onto rafters to dry for five months to further concentrate sugars and flavors. The rich, concentrated juice is fermented very slowly and matured in small oak casks. Torcolato covers a large range of golden hues, from very pale one to a golden amber, depending on the degree of botrytis occuring in the vintage. Torcolato has a rich, spicy flavour reminescent of baked pears, apricot, honey, vanilla, cinnamon, nutmeg and hazelnuts. It is a succulent, luscious dessert wine; yet it is not too sweet, due in part to the perfectly balanced level of acidity.
Torcolato is truly a wine for meditation. It is best served for dessert whether being the dessert itself, or with cakes and fruit tarts or perhaps -the ultimate pairing- with roquefort or other creamy blue cheeses.
