Modena's ancient wine-makers Chiarli Cleto & Figli, aiming at keeping alive the traditions of their land, produce today the Lambrusco made at founder Cleto Chiarli's time: grapes coming from the vineyards located in the Sorbara area; classic vinification; bottling made during the waning moon of March; natural cork closure to the brim of the bottle manually tied up with a string; fermentation in bottle; adequate ageing.
This Lambrusco is clearly addressed to those who can appreciate the characteristics of the natural fermentation in bottle, recalling the peculiar taste of past-time Lambrusco.
It is a dark ruby wine, dry, fruity with a fine and fading froth.
Serve at cellar temperature (14°-16° C).
Care while opening and pouring to avoid the light and typical fermentation residual being removed from the bottom of the bottle.
Lambrusco del Fondatore is an ideal companion to the most traditional dishes of the Emilian cuisine.
