Delicately aged in small oak casks, this Cabernet presents itself with a mature ruby red. It broad, aromatic variety is characterized by fruity aromas, ripe wild berries, vanilla, and licorice. Smooth, velvety tannins, fine notes of cocoa and stewed fruits as well as a marked structure and broadness convince the palate and promise a variety of surprises and a pleasing enjoyment of drinking. Proper aging in the bottle will allow this still young wine to grow even further in its character-rich complexity. The Cabernet St. Valentin makes an excellent companion to strong red meat dishes from the grill, to game and lamb, and to piquant varieties of cheese.
